Strawberries and matcha are a winning pair.
This dessert looks impressive but it’s really simple. Cut the cake into cute bite size pieces and arrange with strawberries and whip cream. I like to serve on a long platter. This is nice when you have several dessert options and everyone wants “just a bite” of this and that.
Strawberry Matcha Bites
1 cup butter, softened
3/4 cup sugar
2 tbsp. matcha powder
1 cup milk
2 tsp. baking powder
pinch of salt
2 3/4 cups flour
1 basket strawberries, halved lengthwise
This cake tastes better the next day. Let the cake cool in the pan, cover and set aside for serving the next day.
Whip cream – beat heavy whipping cream with a hand mixer until peaks form. You can add powdered sugar to keep the cream more stable or a drop of vanilla extract for flavor.
Method: Preheat oven to 350 degrees F. Grease the bottom and sides of a 9×13 cake pan. Combine the flour, salt, baking powder and matcha powder in bowl. Set aside. In a large mixing bowl or using a stand-mixer beat the butter until fluffy, add eggs one at a time, the flour/match mixture, in 2- 3 increments alternating with the milk. Gently combine and pour batter into pan. Bake for 18 to 25 minutes, until toothpick inserted into the center comes out clean.
Serve by slicing into bite size pieces and arranging with whip cream and strawberries.
